Neem voor dit lekkere gerecht de tijd. Je kunt ondertussen veel andere dingen doen, want tijdens het weken en de oventijd hoef je verder niets te doen. Zoals altijd niet moeilijk, wel heerlijk.

Voor de vulling:
1 kop ongeroosterde, ongezouten cashewnoten
20 gram gedroogde paddenstoelen
1 el olie
1 ui, gesnipperd
1 teentje knoflook, fijngesnipperd
2 koppen champignons, in plakjes
1 tl gedroogde oregano
zout, (witte) peper

Tomatensaus:
1 el olie
1 ui, gesnipperd
1 teen knoflook, fijngesnipperd
1 tl chilipoeder
1 blik gepelde tomaten
zout, peper
evt verse basilicum

10 buisjes cannelloni
10 kerstomaatjes, gehalveerd

Kook water in de waterkoker en week de cashewnoten minimaal een half uur. Zet ook de gedroogde paddenstoelen in kokend water in de week.
Snijd ondertussen de uien, knoflook en champignons en zet een grote ovenschaal klaar.
Bak in een grote koekenpan de ui en knoflook voor de vulling in 1 el olie. Giet de paddenstoelen af en bak ze even mee. Voeg de verse champignons toe en bak op middelmatig vuur totdat alles gaar is.
Giet de cashewnoten af en pureer ze met 2-4 eetlepels heet water (of weekwater) zodat ze een romige saus vormen. Lukt dit niet met je blender, voeg dan meer water toe en bind de saus straks met een beetje maïzena.
Roer de cashewsaus door de paddenstoelen en breng op smaak met oregano, zout en peper. Het moet een vrij dikke saus zijn.
Maak ondertussen ook de tomatensaus door in een pan de olie te verwarmen en de ui, knoflook en chilipoeder even te fruiten. Voeg het blik tomaten toe, vul het lege blik met water en voeg dat ook toe. Roer door en laat 10 minuten pruttelen. Voeg eventueel een handje verse basilicum toe en pureer de saus met de staafmixer.
Verwarm de oven voor op 175 graden (elektrisch) of 200 graden voor een gasoven.
Verdeel 1/3 van de tomatensaus over de bodem van de ovenschaal. Vul de buisjes cannelloni met de paddenstoelen-roomsaus en leg ze in de schaal. Verdeel de rest van de tomatensaus over de pasta, deze moet helemaal bedekt zijn. Leg de tomaatjes ook in de schaal.
Bak de cannelloni 30 minuten in de oven en laat dan 10-15 minuten op tafel staan.
Serveer met een knapperige salade.

Variatie: Als lasagne: maak laagjes met tomatensaus, pasta, paddenstoelen-roomsaus en gare spinazie en eindig met de tomatensaus.Ook lekker met wat pijnboompitjes erover.
